Soo Gud: Breakfast Frittata



I came up with this idea after having some leftovers in the fridge that I didn't want to go to waste. What better way to have a healthy and delish start to the weekend?!

Ingredients:

  • Left-over already cooked protein of your choice. Portioned depending on how many you will be serving. ( We used left-over grilled salmon)
  • Butter or Olive oil
  • Cherry tomatoes
  • Left-over already cooked vegetables. (We had grilled asparagus)
  • Eggs ( we used two per person)
  • Garlic powder
  • Cheese (Whatever you have on hand will do, we used smoked gouda)

Cooking Stuff:
  • 9" Pie Pan.
  • Wide spatula.
  • Cutting board.
  • Sharp Knife
The Goods:
Preheat oven to 450 degrees.

The first thing you will want to do is prep your ingredients. First if the protein is not already shredded or diced, go ahead and shred or dice the protein. Then cut up the vegetables you have into bite sized pieces. Slice the cherry tomatoes down the middle (it doesn't really matter how you cut it, but for presentation the long way looks better). 
Next take the butter/ olive oil and rub it all over the inside of your pie pan to give it a good coating. Layer the protein then the veggies inside the pan. After the entire bottom of the pie pan is covered in proteins and veggies, break the eggs into the pan and sprinkle salt, pepper to taste, and a pinch of garlic powder. Be sure not to break the yolk if you want to enjoy the runny goodness during the meal. If though, you are more partial to scrambled eggs, do not fret...just whisk the eggs in a separate bowl along with salt and pepper to taste with a pinch of garlic powder.  Then pour the whisked eggs over the protein and veggies. Place the cherry tomatoes on top and bake at 450 degrees for about 15 minutes for an over medium egg or until the eggs are cooked how you like them.
